KT's Kitchen: Healthy Pizza and Fries Recipe

Some days call for kale and grilled chicken, but others call for pizza and fries. Life’s a balance, right?

Sometimes I’m craving something a little less nutritious but don’t want to give up … well, the nutrition! That’s where this healthy pizza and fries recipe comes perfectly into play.

You can get really creative here and add on toppings, if you like. Whatever floats your boat! I recommend using parchment paper for the pizzas because the sauce may spill over while cooking, so this just helps with cleanup. Unlike real pizza, these are best eaten with a knife and fork.

I recently purchased an air fryer and I LOVE it! I usually use it to make my fries, but since not everyone has one, I wrote this whole recipe using the oven. If you have an air fryer, you can choose to cook your fries in there on the potato setting, and give the basket a shake about halfway through.

Healthy Pizza and Fries

Makes 2 servings

Prep time: 10 minutes

Cook time: 40 minutes


2 potatoes, washed and sliced like fries

4 portobello mushrooms, washed with stem removed

1 cup pizza sauce

3/4 cup shredded mozzarella cheese

olive oil

Italian seasoning

salt, pepper, and optional seasonings for fries (I like Trader Joe’s Seasoning Salt)

optional: fresh basil leaves, any other toppings for pizzas

  • Preheat oven to 400 degrees

  • Place the potatoes in a bowl and coat with olive oil and salt, pepper, and other optional seasonings; mix to combine

  • Line the fries on a sprayed baking tray so they aren’t touching; bake for 35-40 minutes, flipping about halfway through (if using the air fryer, keep the fries as separate as possible depending on how much room you have in your basket; cook on the potato setting, and shake halfway through)

  • When the fries have been cooking for about 10 minutes, add the portobello mushrooms to the oven with the cap-side facing down; bake for five minutes on a baking tray lined with parchment paper

  • Remove portobello mushrooms from oven and season the cap-side with Italian seasoning; spoon pizza sauce into caps and sprinkle with shredded cheese, and add basil leaves or any other toppings of choice here

  • Return pizzas to the oven for 20-25 minutes or until cheese is starting to brown

  • Enjoy!
